When can we be at the stage where you can download a file from one connector (i.e. box), upload that file to (say dorpbox), read content, perform update, and update file to a drive?

We've been adding file management capabilities to the platform over multiple releases. The feature that you have asked for above have been delivered.
This is indeed much needed as the entire platform us of little value (sorry) for our customers if you cannot read or write files.
We need the ability to get to the content of files (not just the paths) for external services (OneDrive, Box, Google Drive, SharePoint, DropBox). Otherwise it is not possible to move files from one service to the other.
We are about to integrate our own PDF Conversion API with NWC in the same way as we have recently done for Microsoft Flow http://blog.muhimbi.com/search/label/Flow. It is essential to be able to read and write a file’s content.
As an update, we now support the ability to use the Set a variable value action to specify a file variable type. You can then use the file variable within the workflow for actions such as attaching the file to an email or Express Approval.
More file support is in progress, so your feedback is much appreciated as we continue to build this out!

Microsoft's Flow platform does this very well.
