Nintex Workflow Cloud Form Start Event - Parselookup or Data Source Options

We need the ability to lookup values in other SharePoint lists on the tenant. There has to be something that can be developed within NWC to make this functionality available for form data input. We created a data source in a NWC form but it only allows you to use the data source in with the data lookup control for it to show in a drop down. It works well for it's purpose along with cascading another lookup field based on the value entered in another lookup field. If there was a default value option to pick from a data source collection that would be helpful but that isn't an option. Our scenario is pick a country and we want to populate the risk level in another field. We can't seem to make this work since lookup and parselookup fields don't exist in NWC forms.

Am I missing something on how to make this work because I was unable find a solution in form designer. If not, making something available for this functionality to bring in data from other sources based on values would be very valuable.
