Because we can't send emails from our own domain, we are unable to see a log of what emails are sent during workflow's instance. We're especially interested in a log of the task emails and their reminders and escalation emails. We can assume they are being sent, but it would be wonderful to see some sort of a a log. Because we can't send from our domain like we can in Power Automate, we often use that tool instead - we can easily look at the mailbox itself to identify what emails were sent as part of a flow. My first inclination is that the log like that would belong under Workflow Tracking?
We agree with both the reasons you suggested.
My Nintex contains most of the information about the lifecycle of the assignments, but not when the person was notified. Without being able to tell when the person was notified, it���s not clear if there is a delay or not.
Another reason is because the workflow designer wants to ensure the reminder email was sent when expected. The reminder is based on a calculation.

So I can better understand your request, can you provide some more context into why this information would be useful? Are Workflow designers concerned that task assignees are not responding promptly due to design issues, or Business owners checking on the progress of their processes, or some other audience with another need?
